Yiddish Mama’s Kitchen: Spinach and Feta Squares

Shavuot is a time to enjoy dairy foods. Here is a great side dish or vegetarian entrée made with spinach, feta cheese, and Phyllo dough that is very popular in the Middle East. This recipe is very convenient because it can be made a day ahead and popped into the oven just before the meal. My family loves this special treat.


6-8 sheets Phyllo dough
melted butter for brushing Phyllo

16 oz Feta cheese crumbled
¾ cup sour cream
¾ tsp salt
2 large eggs
15 oz chopped spinach, thawed and water squeezed out
1 ½ tsp fresh chopped parsley

1 ½ cups milk
5 large eggs
1/2 tsp grated nutmeg


Spray 9×13 inch baking dish and layer 3-4 sheets of Phyllo in pan, brushing each sheet with melted butter. Mix all filling ingredients and put on top of dough. Cover with 3-4 more sheets of Phyllo and butter each liberally as you layer. Cut into squares. Cover and chill one hour. Mix eggs and milk and pour over the squares. Refrigerate overnight. Bake about 40 minutes at 375 F degrees or until golden brown. Excellent side dish for holiday meal or entrée for vegetarian menu.
