By MJBI Staff While packaged matzo crackers are readily available in grocery store Kosher sections during Passover, the homemade version is always more delicious. This variation includes instructions on making soft matzo (like a tortilla) or the more hard cracker version. Keep this in mind, too, as a great holiday cooking activity to do with children! IngredientsFOR CRACKER OPTION: 4 cups flour (can be half white and half whole wheat–NO SELF-RISING!) 1 1/2 cups water FOR SOFTER OPTION: Add 2 Tablespoons olive oil (this will make it softer, more like a tortilla). Directions Combine ingredients and knead for ten minutes. Roll into a ball, cut in half, then cut each half into 8 pieces. Roll out as thinly as possible into ovals and pierce with a fork several times to eliminate air holes. Place on baking sheet covered with parchment paper. Bake at 450 to 500 degrees for about 5 minutes, or until slightly browned.
